Cashew Cheese Dip
With the holiday season approaching, try making a cashew cheese dip for your next party, which doesn't have sugar or dairy elements. This recipe was provided by Stacey Bailey, a registered dietician with Cottage Health.
- ¼ cup nutritional yeast
- 1 cup raw cashews, soaked in water overnight (8 hours)
- 3 tbl. roasted red pepper hummus spread
- ½ tsp. salt
- ½ tsp. pepper
- 3 tbl. cornstarch
- 2 tbl. onion powder
- 3 cups water
- Drain and rinse cashews.
- Put all ingredients into a high powered blender and puree until very smooth.
- Place all ingredients into a saucepan over medium heat. Cook until thickened, making sure to whisk frequently once starting to thicken to prevent sticking on bottom of pan.
